Grandma's Coconut Oatmeal Chocolate Chip Cookies


Sooooo... We have made these cookies everyday for the past 3 days! Like, do you know how much butter we have gone through in 72 hours?! Too much!



My family is known for always having cookies in the fridge or freezer. My mom makes her Famous Oatmeal Chocolate Chip Cookies almost every other day! The other week, I went to my grandma's house and had one of these cookies fresh out of the oven. They were AMAZING. They were so good and I just couldn't get over it. So, I called her the other day, made them, and they disappeared in a couple hours!


These cookies are a lot like my Mom's famous cookies, but they have less flour, more oats, and coconut! And I LOVE coconut so obviously they are dang good. There is something about a cookie that is just a little different than the usual that makes it SO good!



Grandma's Coconut Oatmeal Chocolate Chip Cookies
Makes 4 dozen
INGREDIENTS
1 1/4 cup butter (2 1/2 cubes)
1 cup brown sugar
1 cup sugar
2 eggs
1/2 teaspoon vanilla
1 1/2 cup flour
1 teaspoon baking soda
1 teaspoon salt
3 cups oats (small cut)
1 cup shredded coconut
1 12 oz. pkg chocolate chips
1 cup chopped pecans or walnuts

DIRECTIONS
1) Preheat oven to 350° Fahrenheit.
2) In a stand mixer (or in a large bowl with a hand held mixer), cream butter and both sugars.  Add eggs and vanilla until combined.
3) Sift flour, baking soda and salt together. Add flour mixture into batter.
4) Stir in oats, coconut and chocolate chips and nuts (optional).
5) Drop balls onto a baking sheet and cook for 8-10 minutes until golden on the edges. Enjoy!
