Three Ingredient: Crash Test Coleslaw

Question: What do you think of when you hear the word COLESLAW? Wait, wait, let me guess...

Most people shudder at the thought. But you won't shudder after you taste this coleslaw! I swear it is magical! I could eat the entire bowl by myself (it's happened hah). Also it's only three ingredients, so that makes it even better! I bet you can guess the three ingredients from these pictures ;)

This coleslaw is a staple side dish in our house. It is so fast and easy, yet so so delicious (definitely a win-win). Also, the recipe for this amazing fall apart crock pot pork tenderloin featured in these pictures is HERE.

We call this recipe Crash Test Coleslaw in our house. My father, a mechanical engineer, has done a lot of crash testing in his career. For crash test lunches, my mother always makes this coleslaw as a side.

We named it Crash Test Coleslaw because the workers ALWAYS ask my mom how to make it! Which is hilarious because they are all grown men! This coleslaw is so good that grown men are asking for the recipe, now how often does that happen?! Like never. 

So here it is people: the easiest, yummiest, fastest, and BEST coleslaw in the entire world! 

Crash Test Coleslaw
Serves 5-7
1 lb. Cabbage (half of a medium-sized head of cabbage)
3/4 cup Poppy Seed Dressing (we love Brianna's)
3/4 cup Honey Roasted Peanuts

Clean and chop cabbage into small pieces. In a medium-sized mixing bowl, combine cabbage, poppy seed dressing, and peanuts. Serve and enjoy!

Crock Pot Pork Tenderloin

I was really debating posting this recipe because it is seriously so easy it's barely a recipe! BUT it is so good and I decided that (because my mom makes it like every week) I will definitely want this recipe in the future when I'm a mom!  This savory pork is perfect for any occasion. 

We love to start making this pork on Sunday morning and let it cook until Sunday dinner. Then throughout the rest of the week we will use the left overs for burritos and nachos. 

This is definitely the easiest meat you'll ever make! This pork is so moist and delicious! Therefore it is a staple in our house, because who's not all about good meat, am I right?

Here's the recipe, you'll never believe how simple and yummy it is! Have fun cooking, or more like eating ;)

Crock Pot Pork Tenderloin
2 Pork Tenderloins (around 1 1/2 pounds each)

2 teaspoons salt
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground black pepper

Or sometimes we use this rub:
Grill Mates Montreal Steak Rub (about 1/2 cup, enough to lightly coat pork loins)

Remove pork tenderloins from packages and pat dry with a paper towel. Stir together salt, cumin, coriander, and pepper in a small bowl and rub onto all sides of the tenderloins (if your pork is larger or smaller, just make more or less rub). Place both pork tenderloins in a crock pot and cook on low for 6 hours. After cooking, cut or shred pork and serve hot. We love to eat this pork plain or add it to burritos or nachos. Enjoy!

Coconut Golden Graham S'mores Bars

I got back from school yesterday to my Mom, Ellie (my older sister) and Covey (Ellie's husband) working hard on our new fire pit/patio. They were laying the slate stone and listening to extremely loud (and very exciting) Mexican music because, duh, Cinco de Mayo! Hah! It was quite a site considering the fact that my family is possibly the most white family in all the world, lol. 

After a couple more rocks were laid down, Ellie and Covey went to get more slate stone and mom and I decided that (because we would probably do it wrong anyway) we would retreat back to the house and make something delicious, because that's what we do! 

We decided to make these yummy coconut golden graham s'mores bars! They are seriously delish. AND they are only 5 ingredients to make, so that's always a plus! 

Needless to say, these yummy treats were gone before dinner time! It was hard enough getting pictures of the entire final product! Everyone kept nagging me, "Gretta, are you done taking pictures yet?! I want some!" But luckily I got what I needed before they were devoured (unlike most things haha).

These treats are guaranteed to please everyone! They are chewy and crunchy and all around AMAZINGGGGG. So here's the recipe, I promise you'll enjoy these wonderful things! 

1/4 cup butter (1/2 stick)
1 bag marshmallows (16 oz.)
1 box Golden Grahams (about 8 cups)
1 cup shredded coconut
1 cup milk chocolate chips

1. Grease a 9x13" glass pan.
2. In a large sauce pan, melt butter.
3. Add marshmallows and heat on low until melted completely (do not burn the marshmallows, be sure to scrape all sides and the bottom of the pan with a heatproof rubber spatula).
4. Add golden grahams and stir until completely covered.
5. Add coconut and chocolate chips and stir until incorporated.
6. Pour mixture into prepared pan and flatten with a buttered spatula or waxed paper, press mixture evenly and firmly. 
7. Cut into squares when cool.

Nutella Banana Cake

Well hello there! It's a beautiful Wednesday morning and here I am, sitting at our desk in the piano room. I'm wearing my pink fuzzy robe and staring at these gorgeous pictures and salivating because all I want to eat right now is this cake! But guess what. It's all gone. SURPRISE (not).  Every last crumble was eaten hours ago. Boo.  

Oh my goodness look at the nutella squeezing out right there ^^^ YUUUUUAAMMM. 

This cake is impossible. It's sooooo good! You won't understand until you try it! The nutella is perfectly balanced out with the whipped cream and bananas, and then the moist cake brings the flavor that connects it all and it hits your taste buds like: HALLELUJAH I'VE BEEN WAITING FOR THIS GOODNESS MY WHOLE LIFE. (Ok ok Gretta calm down, hah sorry). 

So moral of the story? This cake is 100% pure happiness and you need it in your life. Don't believe me? Go ahead and try it yourself!

Nutella Banana Cake
1 cup butter (2 sticks)
1 cup sugar
2 eggs
1 cup mashed ripe bananas (2-3 medium bananas)
1 3/4 cups flour
1/2 teaspoon salt
2/3 teaspoon baking soda
5 Tablespoons buttermilk
1 teaspoon vanilla extract

For the topping:
3/4 cup to 1 cup Nutella
3-4 ripe bananas
Whipped Cream Topping (recipe follows)
1/8 cup chopped pecans (sprinkled on top-optional)

1. Preheat oven to 350 degrees Fahrenheit. Grease two 9-inch layer cake pans and line with parchment paper.

2. Cream butter and sugar together until light and fluffy. Add eggs, one at a time, beating well after each addition. Add mashed bananas, mixing thoroughly. 

3. Sift dry ingredients. Alternate adding dry ingredients and buttermilk to butter and egg mixture. Stir until incorporated completely. 

4. Pour batter into prepared pans. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean. 

5. Cool in pans on a rack for 10 minutes. Remove cake from pans and let cool completely for a couple hours. 

6. When cooled, place one layer on a serving plate. Spread nutella on top of cake. Be sure the nutella is warm and will spread easily, we microwaved ours for a couple seconds. 

ALSO, make sure all the aluminium foil is off the top of the jar! Learned that from a couple sparks in the microwave hah! >>>Side note: We really like our nutella so we use about 1 cup, but you can use less if you want. 

7. Next cut bananas lengthwise and then in half. Arrange bananas on top of the cake in a circular pattern, covering as much of the cake as possible. 

8. Spread a little more than half of the Whipped Cream Topping on top of the nutella and bananas layer. 

9. Place the second cake round on top of prepared layer and cover with the remaining Whipped Cream Topping and the chopped nuts. 

Whipped Cream Topping
1 pint whipping cream
3 Tablespoon powdered sugar

1/2 teaspoon vanilla

Pour cream, powdered sugar, and vanilla into a small mixing bowl. Using an electric mixer, beat until stiff peaks form when beaters are pulled out.
