The easiest, yummiest no grain, all nut granola. Honestly its like straight up cookies but we'll just pretend we only eat it on yogurt.
No food processor? No problem! If you have a heavy duty blender (like a Vitamix or Blendtec) that will work great too. Just be sure to not grind your nuts too fine.
No Grain Granola
Yield: One Tray, 2 quart mason jars
2 cups raw almonds
1 cup pecans
1 cup sunflower seeds
1/2 cup shredded coconut
2 teaspoons vanilla
2 teaspoons cinnamon
1 teaspoon salt
1/2 cup honey or maple syrup (we use maple syrup)
1. Preheat oven to 300 °F
2. Combine all ingredients, expect the honey or syrup, in a food processor or heavy duty blender. Pulse until just combined (nuts should be ground but not too fine, see picture above for example).
3. Add honey or maple syrup and pulse until combined and sticking together. Stir around to make sure everything is coated evenly.
4. Pour and spread out on a parchment lined baking sheet. Bake for 35 minutes. Allow to cool (will still be soft until completely cool). Break into pieces and store in air tight mason jars. Enjoy!
